Apparently, it turned when Mana bestowed the curse upon him. It states after he cursed his eye, his hair turned stark white.
I think it also said it occured due to shock? and this has happened before in things like x-men so its not unheard of but yh basically what Kannagi said!
I actually think that maybe Allen is either a special innocence activation or because it is part of Mana's "curse" which he placed on Allen while an Akuma and hence the white hair cause if you recall, Allen only got the white hair after Mana passed away and before he was found by General Cross at the cemetery, staring at Mana's gravestone.
To be frank, I think that if its the innocence side-effect then it would mean that once his body physically discovered and Allen became conscious of the existence of an innocence weapon in his left hand then the white hair was caused and a permanent side effect to that awakening to his innocence. Though I find that really unlikely.
I find the Mana's curse theory more convincing cause I think that perhaps the hair having to be 'white' of all colors, although I truly believe that Allen looks really nice with white hair and no other hair, represents something very important. For example, although I'm not sure if this is even true cause maybe I forgot and misheard and I don't even know why people would think that, but if one would recall, I believe that some random spectators in the Black Order [in episode 1 of d.gray man anime] were whispering 'what's with that kid with white hair? Does he have a death wish?<< again I'd like to highlight maybe I misread it cause i watched that part long ago and maybe I'm imagining things>> Perhaps what the 'spectators' said was what Allen's white hair symbolized?? The wretched state he was in being a sad innocent, yet cursed exorcist...??

I also do think that Allen's hair is white because he was cursed, but my friends always told me that it was because he was in shock and in chapter 206 Allen shut down from everything so it did look like his hair was white from shock. So I got curious and searched around and it turns out your hair can't really turn white like Rogue in X-Men![]()
So I go with the cursed idea.
i think it mostly has to do with the shock. though it's true that there may be no scientific record of someone's full head of hair going grey/white from severe shock, it is accepted that stress makes your hair go grey/white prematurely, even if it's a few strands here and there, not your whole head. you have to allow for suspension of disbelief here. if we were to go by the rule that since it can't really happen in real life, it can't happen, then we may as well throw most genre of anime (and fantasy/sci-fi in general) out the window and there's no point reading this series. if you can believe that a 15 year old boy can fight off demons with his blessed/cursed innocence, then it's possible that his hair went white from shock.

I think it is party the shock and party the symbol of the beginning of exorcist life, but it also has to do something with the character design. I mean that in most mangas the look of the character also reflects his/her personality. So white is considered to be pure, innocent color in the western culture, but it is also a mysterious color in the east and in psychology white is something like "tabula rasa"....so there can be a lot of interpretations why his hair is white/grey. It also means that he is a bit mature for his age.
Anyway it fits him.
